Tonight I am making a super yummy vegetable soup. Healthy too! So check back in later to see how it turned out and the recipe! :)
Lately I have heard a lot of people say how they wish they could cook better food, or wish they had time/ingredients to cook healthy recipes.
I, too, am a very busy mom and work a full time job PLUS take two online classes. It has taken awhile to adjust to cooking meals every night, plus trying to find energy to make my lunches for the next day.
Tip 1: Buy things pre-packaged. Publix sells onions that are pre-peeled and cut, tomatoes, lettuce, mushrooms, carrots, broccoli, cauliflower, AND MORE! And it is not tampered with or full of sodium. These things can expire pretty quickly just like all other veggies, but it is so much quicker to just pull them out and start throwing it together instead of having to peel, wash, slice, cut and THEN cook.
Tip 2: CROCK POT! It has been my best friend! You can throw in anything! A lot of times I prepare what I want to cook the night before, and in the morning I throw it in the crock pot on low and when I come home from work dinner is already almost ready! You can make chicken in there and it is honestly my favorite way to eat chicken aside from grilling because it makes it so tender. Beans, soups, and much more! Even casseroles! I am telling you..crock pot is the way to go and it’s almost impossible to mess something up in there!
Tip 3: PLAN YOUR MEALS. It makes it easier to grocery shop and make sure you DO have the right ingredients. And what’s awesome is most recipes have pretty normal ingredients and the unusual ones tend to be spices or something dry that can last quite awhile.. which makes it pretty worth buying because it can last/be used for other recipes.
Hopefully those are some helpful tips! Nothing really specific..just what I do. Some certain things take a little more time than others to cook..but if you prepare for it then it goes really smoothly.
Some recipes have a lot of steps. Set out several small bowls, and measure things ahead of time, that way when it comes time to cooking and combining everything is ready to grab and you don’t have to fret and rush around the kitchen. It’s a small, simple tip but it helps!
